Until I discovered pre-made pot sticker wrappers, I was always intimidated by the though of making all those little doughy things...  This traditional pot sticker recipe uses diced chicken, celery and other goodies for filling, and makes it easy by using purchased wrappers, also known as gyoza.  You can cook these pot stickers in your wok or your deep fryer.

Preparation time:  About 30 minutes

Yield:  About 48 pot stickers


2 chicken breasts, chopped
1/4 cup peanut oil
1/2 cup green onions, finely chopped
1 cup celery,  finely chopped
1 jalapeno pepper, finely chopped
3 tablespoons sake or dry sherry
1 teaspoon sugar
1 tablespoon cornstarch
1/2 teaspoon salt
1 package, 14-oz, pre-made, round pot sticker wrappers


Chop chicken and celery into very fine pieces, and place in bowl.  Chop green onions, including the green tops and place in bowl with chlpped chicken and celery.  Add cornstarch, sugar, salt and sake to bowl.  Add in peanut oil and stir, until all ingredients until well blended and cornstarch is well distributed.

Set on cutting board six pot sticker wrappers.  Be sure to leave the rest sealed in the package, as it is imperative that they remain moist.  Spoon about 2 teaspoons of the filling on one side of each wrapper, and shape it to a gentle, round shape.  Fold half of dough over half that contains the filling.  Pinch about 1/2" of curved edge closed in the middle.  Gently pinch all the curved edge closed, until all of the seam is sealed.  Place pot sticker on side, on cutting board, and gently smooth out any lumps in order to make the pot sticker more attractive.  Cover completed pot stickers lightly until all have been made.

Left:  I sort of roll everything up and then pinch it shut; the efforts aren't critical to good taste.  Right:  I'm deep frying my pot stickers.  I get better results when I deep fry them, rather than cooking them in the wok.

Heat deep fryer to operating temperature.  Place pot stickers, four at a time, in deep fryer and cook until golden brown, which is about 1 to 2 minutes.  Drain on paper towl.  Total cooking time to cook all the pot stickers in batches should be in the neighborhood of 15 to 20 minutes.  Serve immediately.


I was able to find the pre-made pot sticker wrappers in the produce section of our local supermarket.  In the case of our supermarket, the wrappers were hung on a rack near the pre-cut, bagged lettuce, cabbage, and the fancy, bagged salad mixes.  I've also been told that that many asian-oriented grocery stores carry these wrappers.
