What do you do with that bunch of celery that you purchased last week, intending to make celery sticks for the party that was cancelled at the last minute?  One day, we found ourselves in that situation and since I don't like to let anything edible go to waste, I came up with this tasty stir-fry dish.


Special tools:  Electric wok, with cover
Preparation time:  About 15 minutes
Cooking time:  About 10 minutes, but pork should marinate overnight for best flavor  
Yield:  4 servings    


1/2 lb pork, chopped
1 bunch celery, leaves removed, chopped
1/4 lb china peas, ends and stems removed  
3 green onions, diced, including greens 
1 red bell pepper; you can substiture a green pepper and forgo the presentation effect
2 cloves garlic, minced
2 tablespoons olive oil  


Marinate pork by stirring together 3 tablespoons soy sauce and 2 tablespoons dry sherry.  For best results, marinate at least 2 hours, overnight is better.

Prepare cooking sauce, according to directions, before cooking.

Heat wok to medium-high, about 350 degrees.  Add olive oil.  When oil is hot, add pork, discard marinade.  Cook pork until lightly browned, stirring as needed; about 5 minutes.

Left:  Everything is blended together and is almost ready for dinner.  Right:  Here's a meal that I actually ate at work.  Left-to-right:  Cooked corn and white rice, topped with Ranchero Sauce.  My Stir-Fried pork is on the right side of the dish.  Gourmet food at work on the night shift; what do you think about that?

Add cooking sauce, chopped celery, stir, cover and cook for 2 minutes.  Add remainder of ingredients, stir, cover and cook until most of liquid is absorbed; about 5 minutes.  Stir as needed.  Serve with white rice, or stir-fried vetables.
