Here's a copy of the menu of Serious Texas Bar-B-Q, located in Durango, Colorado, current as of September 15, 2005.  Note that the smoked meat dishes are served on butcher paper, as BBQ entrees are served in the Texas Hill Country, which makes for a very, authentic Texas touch.  I have to admit, I have never eaten barbecue west of Texas, served on butcher paper, the way it's served in the Texas barbecue belt.

Well, there you have it.  If you want to sample the taste of Texas, but you don't want to drive all the way to the Texas Hill Country, pay a visit to Serious Texas Bar-B-Q in Durango, Colorado, and your Texas BBQ "fix" will be satisfied.  Note that the menu is quite limited, as barbecue joints in Texas do only a few things well, but believe me, the limited things they do, they do them good!  This rule is no exception in Durango, Colorado.
